Hailing from the Philippines and raised in South Africa, Chef Edwin’s multicultural upbringing has significantly shaped his culinary approach. After completing his studies in Arts and Business Economics, he pursued his passion for cooking, earning a degree in Culinary Arts.

 

Chef Edwin’s career is marked by notable achievements, including his vital role in the opening teams of three Nobu locations, known for their exquisite Japanese-Peruvian fusion. His time with the Ritz Carlton brand saw him pioneer a modern interpretation of contemporary Japanese cuisine. Furthermore, he showcased his expertise at two prestigious international soccer events, where he catered to VIPs and soccer teams.

 

In his most recent position at the Park Hyatt Hotel Doha, Chef Edwin successfully revamped the Japanese/Nikkei menu, leading the restaurant to earn consecutive awards as the best Japanese dining destination.

 

Hamabe Japanese Restaurant, located within The Westin Resort Nusa Dua, Bali, offers a refined dining experience characterized by authentic Japanese flavors.
