In a celebration of culinary artistry, two renowned chefs, Paul Bentley and Will Meyrick, joined forces to create a dining experience that left a mark on Bali’s vibrant food scene.
Paul Bentley, recently honored as West Australia Good Food Guide’s Chef of the Year 2024, brought his fresh approach to traditional dishes, honed at his acclaimed Perth restaurant, Casa. Known for his skill in marrying innovation with tradition, Bentley presented inventive takes on Italian classics that delighted guests.
Meanwhile, Will Meyrick, a true culinary adventurer, infused his global experiences into the evening’s menu. For this collaboration, Meyrick channeled his passion for Italian cuisine, offering dishes that captured the heart of Italy with his signature twist. His knack for elevating simple, traditional flavors into extraordinary creations truly shone through.
The event began with a thoughtfully curated selection of entrées, starting with fluffy focaccia perfected over six months of dedicated R&D. This was followed by octopus carpaccio, elegantly complemented by chili oil, wasabi mustard, and pickled jalapeño. The appetizers continued with crispy cacio e pepe friti and dolma—a delicate white anchovy garnished with caviar and creamy yogurt tzatziki.
For the main courses, the spotlight was on succulent lamb rump skewers, rich tuna rib eye enhanced with bone marrow, and a perfectly crisp yet tender pork belly. Each course was thoughtfully paired with exclusive Rosabrook Wine, available nowhere else in Bali but Buzo.
As the evening unfolded, guests were treated to a rare culinary journey that beautifully blended Bentley’s modern Italian flair with Meyrick’s globally-inspired interpretations. Together, they celebrated the joy of tutti a tavola—the lively Italian tradition of gathering at the table.

The restaurant, a fresh venture by chef Will Meyrick, introduced a Japanese-Italian fusion concept, offering a creative mix of gourmet pizzas, fresh sushi, and artfully crafted cocktails.
