A celebrated figure in the culinary world, Chef Jean-Baptiste brings over 30 years of global experience, underpinned by his philosophy of sustainability, innovation, and respect for locally sourced ingredients. Each dish he creates reflects his commitment to minimizing food waste and fostering creativity, offering diners a distinctive culinary journey.

 

 

Hailing from the picturesque Champagne region of France, Chef Jean-Baptiste’s passion for cooking was deeply rooted in his upbringing amidst nature. Surrounded by abundant resources, such as fresh fish from local rivers and diverse forest produce, his culinary perspective was shaped by a profound respect for fresh, natural ingredients. This ethos remains central to his approach, as sustainability and ingredient reverence guide every aspect of his work.

 

 

Chef Jean-Baptiste’s illustrious career began in 1992 and has taken him across the globe, with stints in France, Switzerland, the UK, the USA, and numerous other countries. His expertise spans roles as a consultant for luxury hotels and as chef-owner of the esteemed Hostellerie La Montagne in France’s Champagne region. In 2002, at just 27, he earned the distinction of being France’s youngest Michelin-starred chef, a title he has held for 23 years, further cementing his culinary mastery.

 

At Koral Restaurant, Chef Jean-Baptiste introduces a global perspective to Bali’s dining scene, curating a menu that balances the simplicity of seasonal ingredients with refined culinary artistry. His signature Zen menu, an eight-course showcase, marries French techniques with Indonesian flavors, featuring shrimp, lobster, and local spices. Other offerings include the Experience menu, the Gourmet menu highlighting Balinese spices, and the Vegetal menu, celebrating local produce like Bedugul tomatoes and Kintamani tangerines.

 

 

With Chef Jean-Baptiste at the helm, Koral is set to ascend to new culinary heights, with aspirations of securing a Michelin star and a Michelin Green Star, exemplifying a harmonious blend of gastronomic excellence and environmental sustainability.
