For two unforgettable evenings on 23 and 24 August 2024, Alila Villas Uluwatu invites you to embark on a culinary journey unlike any other. Executive Chef Derrick Walles will be joined by the renowned Korean culinary artist Chef Hahn Na Rae from BanJoo 반주 Jakarta, presenting a gastronomic experience that beautifully melds modern Korean influences with the serene elegance of Bali.
This event marks the debut of Alila Villas Uluwatu’s “Queens of the Kitchen” series—a celebration of culinary excellence led by some of the most inspiring female chefs in Indonesia.
Chef Hahn Na Rae, born in Seoul and raised in Vienna, Austria, brings a unique perspective to Korean cuisine. Her approach is both innovative and deeply rooted in the traditions she learned from her mother, whose cooking inspired Chef Na Rae to open three acclaimed restaurants in Seoul. Now based in Jakarta, she continues to redefine Korean cuisine at BanJoo 반주 and through her private dining experiences at NARAE KITCHEN.
In this special collaboration with Chef Derrick Walles, Chef Na Rae will showcase her inventive fusion of Korean heritage and global culinary influences. Together, they will craft a degustation menu inspired by the exquisite dinners Chef Na Rae often prepares for Korea’s most prestigious families, using only the finest and sustainably sourced ingredients.
The evening begins with an array of canapés, including delicacies like Kimchi Squid Jeon and traditional Korean savory pancakes. Guests will then be taken on a meticulously curated journey through flavors, from the vibrant Korean Raw Fish Ceviche and Tuna and Hamachi Crudo to the luxurious Mascarpone Scallop and Lobster Ravioli, culminating in the tender perfection of Wagyu Tenderloin and Abalone Steak.
Desserts will be a harmonious blend of Korean and Balinese inspirations, featuring traditional chapssal sticky rice cake and berries sourced from Bali’s lush Bedugul region. This will be a culinary adventure that promises to leave a lasting impression.
