Babaghanoush: Chef Bjorn Shen’s New Culinary Oasis in Bali Blends Middle Eastern Flavors with Local Charm

Babaghanoush, the latest venture from renowned chef and restaurateur Bjorn Shen—who is also a judge on MasterChef Singapore—will soon open in the heart of Bali. This marks Chef Shen’s second international endeavor following the success of his flagship restaurant, Artichoke, in Singapore, and Nep! in Penang. Babaghanoush promises to introduce his signature playful and relaxed dining experience to the island’s vibrant culinary landscape.

 

 

The restaurant’s name is a clever homage to the alphabetical order following his first restaurant, beginning with “A,” while also reflecting its deep roots in Middle Eastern culture. “Babaghanoush is a grilled aubergine dish, a staple across the Middle East, much like the beloved hummus,” Chef Shen explains. “The name encapsulates our menu and logo, embodying a certain charm. We are eager to offer a fresh perspective on Middle Eastern cuisine, blending it with the diverse ingredients of Bali.”

 

The decision to establish Babaghanoush in Bali follows Chef Shen’s successful 14-year tenure in Singapore, alongside various consulting projects with Biko Group in Jakarta and Treasure Bay in Bintan. He notes the welcoming nature of Indonesia and its openness to new ideas. The island’s rich agricultural heritage, along with direct connections to local producers, fishermen, and farmers, further inspired this venture.

 

 

At the heart of the menu are house-made breads and locally sourced seafood, fruits, and vegetables, all prepared with Middle Eastern influences. Chef Shen envisions a culinary dialogue between Bali and Beirut, skillfully merging Middle Eastern techniques with Balinese herbs and spices. Highlights include a native tabbouleh salad featuring kedondong fruit and kemangi, as well as barbecued oysters with an Egyptian garlic taklea.

 

The ambiance of Babaghanoush is designed to be relaxed and inviting, offering a refuge from the Bali heat, enhanced by Chef Bjorn’s own whimsical artwork. The interior evokes the coziness of a dark wood log cabin, reflecting the chef’s passion for camping, with a menu featuring upscale wood-fired dishes.

 

With its creative offerings, friendly service, and stylish environment, Babaghanoush is poised to become a must-visit destination for food enthusiasts and culinary adventurers alike.
