Executive Chef Bayu from Griya Santrian retraces the roots of local flavours in a fine dining culinary night Sip & Savor – Nusantara Treasure Cuisine. Menu is paired with local fine wines – Two Island by Hatten Wines.

With a zeal in reintroducing local ingredients and Indonesian dishes, Chef Bayu prepares a gastronomic adventure at the Starfish Beach Lounge, covering locally sourced ingredients prepared with fusion twist. Among them Duo of ”Cakal fish” grilled, “Undis“ bean tortellini, and ”Beef Rendang” tenderloin mushroom bourguignon. He revealed that these dishes were all-natural, no food enhancers, which ingredients can be picked from one’s backyard.

“We are proud to reintroduce these locally sourced dishes,” he added. “We are sincere in offering these dishes that are really far from the modern food we have today. Chef Bayu added that if only the young ones today can try the dishes from the past, they can appreciate more how simple these can be prepared. “This way, we can promote, too, our local ingredients. Generally, we envision a new generation who are aware of our culinary heritage and continue to pass it on to future generations.” He said,
