Taking place over two evenings, Friday, 7 February 2025, and Saturday, 8 February 2025, this exclusive dining event brings together the culinary expertise of Chef Vincent Hiew of SIKI and Chef Edwin Sta Ana of Hamabe to present an extraordinary 8-course menu.

 

The Collaboration Highlights

This exceptional menu features three signature dishes from Hamabe, three inventive creations from SIKI that blend Japanese techniques with Balinese and global influences, a distinctive “wave-themed” dish symbolizing the chefs’ collaboration, and a dessert exclusively crafted by The Westin Resort Nusa Dua, Bali. Under the leadership of Chef Edwin Sta Ana, Hamabe Japanese Restaurant has transformed into a hub of culinary innovation. With a background that includes Nobu, The Ritz-Carlton, and Park Hyatt, Chef Edwin’s globally influenced style merges traditional Japanese techniques with fresh, seasonal ingredients and bold modernity. Chef Vincent Hiew, the creative mind behind SIKI, brings his expertise honed at Nobu locations worldwide and his passion for fusing Japanese traditions with global flavors to create dishes that celebrate the union of Japan and Bali.
