Jumby Bay, A Rosewood Resort, the award-winning resort nestled just off the coast of Antigua, has launched the Beach Shack.
The resort’s newest culinary experience offers guests an authentic Antiguan food experience in a casual and relaxed atmosphere, directly on the sands of Jumby Bay Beach. Inspired by colorful West Indian style food shacks found in small villages throughout Antigua, the Beach Shack offers delicious local street-style food such as lobster and chicken wraps and rotis and locally caught fish ceviche.
Infused with the exotic flavors of the West Indies, the Beach Shack features a vibrant menu of both sweet and savory bites, expertly prepared and creatively presented. A ceviche bar offers a variety of delicious dishes inspired by the sea, including Mahi mahi with ginger and lemon grass; Shrimp ceviche with cilantro and red onion in a tomato lime marinate; Conch with pickled vegetable and basil; Lobster mango and lime. Guests can also choose from a selection of savory wraps and paninis, including Hot Jerk Pork wrap; Hot Caribbean curried chicken; Speck ham and tomato pesto with mozza Panini. For lighter snacks, guests can create their own refreshing smoothies from native fruits like Antiguan Black Pineapple, guava and mango, and an assortment of other seasonal fruits and vegetables. Guests may also choose from a selection of refreshing Caribbean-inspired flavors.
Built by Jumby Bay carpenters, the Beach Shack features décor from several local artists throughout and was inspired by the colorful food shacks found in Antigua’s capital city of St. John’s.
“We are excited to offer guests a unique taste of the local area with the Beach Shack,” said Andrew Hedley, managing director of Jumby Bay and regional vice president of Rosewood Hotels & Resorts. “We are always looking for different ways to help our guests uncover the local culture and area, and the Beach Shack demonstrates our commitment to offering guests truly local, authentic experiences that perfectly complement the resort’s beautiful, natural setting.”
The Beach Shack is open from 9am – 3pm, daily, for Caribbean continental breakfast and smoothie bar in the mornings, and for a more informal grab-and-go lunch from 12 noon – 3pm.
