At the heart of Bali Beach Hotel The Heritage Collection, Roso Restaurant unveiled Rasa Nusa on Friday, May 23rd—a culinary tribute to Indonesia’s rich and diverse heritage. More than just a dinner, it was an evening of artistry, where a live Wayang Kulit performance unfolded in harmony with 22 signature dishes, guiding diners through a tale of tradition, flavor, and memory across the archipelago.

 

 

From the lush highlands of Sumatra to the eastern shores of Papua, Rasa Nusa captures the essence of Indonesia’s islands in a refined, immersive experience. Each dish reflects a story—crafted with care, rooted in heritage, and elevated by modern technique. Ingredients are sourced locally, honoring both the land and the hands that cultivate it.

 

 

The menu begins gently with the vibrant Serombotan of Klungkung, then builds toward bold and soulful dishes like Madura’s Sate Kambing and Minang’s tender Gulai Kambing. The journey ends on a sweet, nostalgic note with Pisang Rai—banana and palm sugar crèmeux wrapped in coconut warmth, echoing the comfort of home.
