Amara Singapore proudly presents the second edition of Local Legends at Café Oriental, featuring the celebrated Chef Damian D’Silva of Rempapa. From 2 April to 17 April 2025, this collaboration pays homage to Singapore’s rich culinary heritage, offering a special menu that reimagines time-honored flavors. Rooted in tradition yet crafted with a contemporary touch, each dish invites diners on a journey through Singapore’s multicultural past.

 

 

For 39 years, Amara Singapore has been a cornerstone of Tanjong Pagar, cultivating meaningful connections through hospitality and heritage. As Singapore marks its 60th anniversary, Local Legends continues to honor the chefs, home cooks, and generational eateries that preserve the nation’s vibrant food culture. More than a dining experience, this initiative is a tribute to the artistry and soul behind Singaporean and Southeast Asian cuisine.

 

Chef Damian D’Silva, often revered as the Grandfather of Heritage Cuisine, has dedicated his career to preserving the depth and complexity of heirloom recipes. Drawing from his Peranakan and Eurasian roots, his menu at Café Oriental features iconic flavors such as Ayam Buah Keluak, Eurasian Lamb Dhalcha, Chi Pow Kai, and the beloved Kedondong Salad. Each dish reflects his lifelong mission—to celebrate the shared diversity that defines Singapore’s food landscape.

 

 

The Local Legends series will continue to spotlight culinary pioneers, with upcoming collaborations featuring Keng Eng Kee Seafood (KEK Seafood), a third-generation Zi Char institution, and Chin Mee Chin Confectionery, a century-old coffee shop cherished for its kaya toast and nostalgic breakfast fare. Through these partnerships, Amara Singapore remains committed to preserving Singapore’s gastronomic legacy—one legend at a time.
