Rock Bar, a premier destination for sunset cocktails, proudly unveils its new sustainable cocktail menu crafted by Head Mixologist Simone Marchese, celebrating its 15th anniversary and honoring Bali’s natural beauty, especially the Indian Ocean.

 

 

With over a decade of experience at renowned bars like Soho House and Paris Society, Marchese, recognized as one of France’s top 100 bartenders in 2023, brings exceptional expertise to the menu. Guests can enjoy a sensory journey through cocktails that prioritize fresh, local ingredients and a zero-waste philosophy, using every part of the ingredients.

 

Signature cocktails include Notoro, inspired by Lake Notoro in Japan, featuring El Jimador Tequila, nori, and moringa, and Dragon Sunset, a vibrant blend of gin and Cointreau inspired by the sunsets of Song Nam, Vietnam. Each drink reflects eco-friendly practices and regional flavors.

 

 

For non-alcoholic options, Rock Bar offers sustainable mocktails like Nom Tom, inspired by Thai coconut dumplings, blending mint and coconut for a refreshing experience.
