From Bali to Paris: Winner of Young Talents Escoffier Asia Pacific from The Apurva Kempinski Bali to Represent Indonesia and South East Asia at the Global Finale in Paris

I Kadek Sumiarta, a gifted young chef from The Apurva Kempinski Bali, has quickly ascended in the culinary world. Under the expert guidance of the resort’s distinguished chefs, Kadek has earned prestigious victories in the Jeunes Talents Escoffier competition, representing Indonesia in May 2022 and the Asia Pacific region in November 2022. Now, with his sights set on the global finale in Paris this November 2024, Kadek is poised to compete on behalf of Indonesia and Southeast Asia, aiming for the coveted title.

 

Founded in 1954, Disciples Escoffier International honors the legacy of renowned chef Auguste Escoffier. The association, with over 30,000 members across more than 30 countries, is committed to upholding Escoffier’s values of culinary excellence, knowledge-sharing, and cultural respect. The Jeunes Talents Escoffier competition is central to this mission, fostering the next generation of culinary artists. Open to chefs under 25, the competition challenges them to merge Escoffier’s timeless techniques with modern creativity. Kadek’s journey in the kitchen was sparked by his cousin’s experiences, combined with a deep passion for creativity rooted in his Balinese heritage. Drawing inspiration from his artistic talents, he channels this creativity into his culinary work, meticulously highlighting the essence of each ingredient—a philosophy closely aligned with Escoffier’s principles.

 

Reflecting on his achievements, Kadek describes his victories in Indonesia and the Asia Pacific as “surreal,” achieved through rigorous dedication and preparation. Mastering classic French dishes was particularly challenging, as he ventured into unfamiliar flavors. Supported by the team at The Apurva Kempinski Bali, Kadek has refined his skills under the mentorship of renowned chefs, including Jean-Yves Leuranguer, a Meilleur Ouvrier de France Cuisine (1996) winner, and Ho Weng Kit, an award-winning chef recognized across Asia and Europe. Their guidance has been instrumental in shaping Kadek’s unique approach to blending traditional techniques with modern flair.

 

As the global culinary community awaits the Young Talents Escoffier finale, Kadek remains focused on perfecting his dishes and representing Indonesia with pride. His creations will showcase the rich flavors of Indonesian ingredients while continuing Escoffier’s culinary legacy. “I am honored to represent Indonesia on such a prestigious platform,” Kadek shares. His calm and focused approach, nurtured by his mentors, reflects his dedication to overcoming challenges and continual learning.
