The Westin Resort Nusa Dua, Bali, is delighted to announce the appointment of Chef Dane Fernandes as its Executive Chef, effective January 2024. Hailing from the picturesque island of Charao in Goa, India, Chef Dane brings a rich heritage and over 14 years of culinary expertise to this tropical haven.


A devoted husband and a father or two, originally rooted in a family of farmers, Chef Dane’s culinary journey began with a profound respect for nature’s beauty. His arrival at The Westin Nusa Dua, Bali coincided with last Christmas, immersing him in the vibrant festive season, and he’s been captivated by the cultural extravaganza the resort offers.


Chef Dane’s culinary prowess, honed during his tenure as the youngest Executive Chef at St. Regis under Marriott APAC, is set to elevate the dining experience at The Westin Resort Nusa Dua. His impressive career includes pivotal roles at JW Marriott Mumbai Sahar and St. Regis Mumbai, earning him accolades such as the Rising Star Asia Pacific for Marriott International in 2018 and the Young Chef 2022 by Campo Viejo.


Noteworthy in his portfolio are contributions to events like the Make in India banquet in Mumbai and catering for prestigious occasions such as the World Economic Forum in Davos and the 19th Commonwealth Games in New Delhi. Chef Dane’s collaborations extend to partnerships with Elle & Vire, Michelin star chefs, and the creation of innovative Food & Beverage campaigns. Among his culinary innovations is the acclaimed Creme & Cacao, a gourmet seven-course experience that pushes the boundaries of milk and chocolate, crafted in collaboration with Elle & Vire and Callebaut.


Aligned with The Westin’s commitment to holistic well-being, Chef Dane is eager to showcase his mastery in The Westin’s distinguished “6 Pillars of Wellness,” including Sleep Well, Move Well, Feel Well, Work Well, Play Well, and particularly, Eat Well. The “Eat Well” pillar emphasizes healthy food options, cocktails with antioxidants, and a variety of nourishing juices and smoothies at Westin Fresh by the Juicery. Even in meeting rooms, Westin features a whole selection of healthy snacks to replace traditional options.


When not creating magical dishes, Chef Dane enjoys swimming, exploring new places, and running.
